Jade: A Gem Of A Restaurant

Tucked away in the corner of The Fullerton Hotel lobby is a gem of a restaurant. Jade, Chinese restaurant serving delicious fine cuisine. If one is looking for a centrally located Chinese restaurant to host a client lunch in the Central Business District of Singapore, Jade is a good venue. Boasting an excellent ambience and wide ranging dishes, Jade allows for a different dining experience.
I had a six course set menu starting with the Chilled Australian Abalone served with Hua Tiao Granite and Premium Soy Sauce. A first for me, this dish was a pleasant start to the dining experience. Fresh abalone is served chilled over a martini glass filled with ice. What was interesting was the Hua Tiao Granite which is in actual fact, Hua Tiao frozen into a ice shavings; an innovative presentation and it allowed for an interesting taste and texture.
The second dish was the Braised Superior Shark's Fin with Truffles and Egg White Served with Superior Consomme. I must say that the blend of Shark's Fin and Truffles was very good. What was most impressive, however, was the Superior Consomme. It had a most inviting aroma. The rich broth was heavenly and upon consuming it, one can feel the goodness coursing through one's system.
The Stir Fried Scallop with Honey Peas and Fresh Lily Buds was decent. It was what one would expect. Nothing out of the ordinary. What was interesting was the Braised Bean Curd with Spinach Layer and Bai Ling Mushrooms. The bean curd had a layer of spinach which added a different dimension of texture to plain bean curd. The Bai Ling mushrooms were solid and was most delicious.
The highlight of the meal was definitely the Steamed Fried Rice wrapped in Lotus Leaf topped with Foie Gras and XO Sauce. When it was served, the aroma wafted throughout the room. The fried rice is served wrapped in lotus leaf, allowing the fragrance of the lotus leaf to be co-mingled with the rice. The Foie Gras was generous and cooked to perfection. Taking in a spoonful of the fried rice topped with the Foie Gras was simply heavenly. It is definitely an amazing blend. This dish is not to be missed when one visits Jade at Fullerton Hotel.
Ending the meal is a Honey Papaya Puree with Almond Pudding. It was a sweet end to an good Chinese meal. The service of Jade at Fullerton Hotel is good. A must visit if you are in the area.
